The Fifth String reopening in Attimo Wine after closure last month

The restaurant: The Fifth String at Attimo; 2246 Larimer St., Denver

About: Owner and chef Amos Watts closed The Fifth String’s previous location in LoHi last month. He told The Denver Post at the time that the kitchen was too big for the intimate eatery and he was already on the hunt for a smaller space. Watts quickly got in touch with Attimo owner Jon Schlegel, who’s also the founder of Snooze A.M. Eatery, through a mutual friend. Schlegel was looking for someone to take over the kitchen at Attimo and was a fan of Watts, who previously worked at acclaimed Colorado restaurants Corrida, Acorn and Old Major.

The new iteration of the restaurant will be a collaboration between Watts and Schlegel, like the many food concepts within local breweries.

“We plan to stay here for at least six months while we look for a brick-and-mortar space, so this gives us some time instead of rushing right into something,” Watts said. “We do hope to be here for the long-term and run both places at once eventually.”

Who’s cooking: Watts and chef de cuisine Alex Zorski will run The Fifth String at Attimo’s kitchen, which is much smaller than their last location, which Watts described as fit for a hotel. “I get to cook again, instead of calling tickets, which is what I’m most excited about,” Watts said.

What’s on the menu: Due to the smaller kitchen, The Fifth String’s fusion menu will be limited to around five or six dishes plus dessert. Watts said he plans to add more shared plates for happy hour and work with Attimo’s winemaker to pair signature wines with his seasonal, rotating dishes. However, The Fifth String will still have a wine and cocktail list outside of the house wine.

Opening: Sept. 19, 2023. Planned hours: 3 to 9 p.m. Tuesdays through Thursdays and until 10 p.m. on Fridays and Saturdays. The restaurant will be closed Sundays and Mondays.
